This is great salad! Chewy,Delicious & Incredibly healthy. I got this recipe from The Stop Cookbook it is a community food center located in Toronto. My mom and I have made a lot of adaptions to this recipe so I will post that recipe only because it is quite a bit different than the original. We are currently still tweaking it to our liking so I will edit this recipe as I make changes. The original recipe is out there if you would prefer to try that.

4 cups cooked grain; farro&quinoa

3tbsp olive oil

4 tbsp apple cider vinegar

1 tsp cumin

1 tsp coriander
-
1 tsp curry
-
1 1/2 tsp diamond crystal salt OR 3/4 tsp table salt

2 cups finely diced carrots

2 cups finely chopped bell peppers

1/2 cup each of parsley and scallions, finely chopped

1 (540ml) can of chickpeas rinsed and drained

1 handful of toasted pumpkin seeds
-
1 handful of dried fruit cranberries,raisins and apricots

1 small handful crumbled feta

2 tbsp maple syrup
Cook grains, mix it all together!
