These are my husbands favorite type of cookies. I could care less about them (probably a good thing:) I like my cookies soft he likes them crispy, you know how it is! Igot this recipe from food.com and the only change I made was to double the vanilla.
Chocolate Butterscotch Cookies
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
2/3 cup cocoa
1 cup butter or 1 cup margarine, softened
3/4 cup sugar
2/3 cup brown sugar, packed
2 teaspoon vanilla
12 ounces butterscotch chips
1.) Preheat oven to 350 degrees.
2.) Combine flour, baking soda, salt, and cocoa in mixing bowl.
3.) Beat butter, both sugars, and vanilla until creamy.
4.) Beat in eggs.
5.) Gradually add flour mix.
6.) Stir in butterscotch chips.
7.) Drop by large tablespoonful onto ungreased cookie sheets.
8.) Bake 9-11 minutes, or until slightly set.
9.) Cool on cookie sheets another 2 min, than remove to wire racks.
