I had some Zucchini given to me from avid gardener (Thanks Tara) I was so excited to get fresh garden veg. I ate some raw,sauteed and decided to make muffins with the rest.
Zucchini Choc Chip Muffins
Makes:12 standard muffins
3/4 cup all purpose flour
3/4 cup whole wheat flour
1/2 cup sugar
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1 egg, lightly beaten
1/2 cup veg oil
1/4 cup milk
1 tbsp lemon juice
1 tbsp vanilla
1 cup shredded zucchini
1/2 cup chocolate chips
1/8 cup (2 tbsp) pumpkin seeds
1.) Preheat oven to 350F line or spray standard 12 cup muffin tin.
2.) In a lrage bowl whisk together,flours,sugar,baking soda,cinnamon and salt then make a well in the center.
3.) In a different medium size bowl mix together egg,milk,lemon juice,vanilla add to the well you made in the dry mix and stir gently until just about mixed then fold in zucchini and choc chips.
4.) Sprinkly the pumpkin seeds evenly on top of the muffins and bake for 20-25 min until they muffin top springs back when touched gently.
These look delicious! I love pumpkin seeds...

A fav in our house. Except P used to pick chocolate chips out. Now she knows how awesome they are.
