I went to the Stratchona Farmers Market on Saturday with my mom (it was so busy, must have been the rainy weather:) I picked up this gorgeous organic chicken from Sunworks Farm. They are located in Armena Alberta and have some of the best products eggs,poultry,beef ( I bought a brisket to try.)
I decided to do a butterflied chicken and I found this recipe on Chowhound but it is an American Test Kitchen recipe the recipe I used is here. There is also a great discussion of the best roast chicken recipes, I love it when people are as crazy as me. A nice bonus of a flattened chicken is you get the backbone and neck/bits to make chicken broth with.
The basics are a one hour brine and then you rub a compound butter (garlic,thyme.dijon,butter ect) under the skin.This is a 500F recipe so you get crispy skin. Slice up some potatoes and put them on bottom of the roasting pan to basically cook in the chicken fat and drippings. Some of the potatoes turn into chips, need I say more? This is my new go to flattened chicken recipe.
